Abstract
Potato is the basis of many preparations at the table; its derivatives create business opportunities and development in the areas where it is cultivated. The commercialization, supply and provision of potato and their derivatives has grown, due to the use of new technologies that offer a profitable proposal from the productive and competitive sector. This article describes the integration process between the production chain and marketing and derivation opportunities for potato; an international perspective is indispensable to compare characteristics, varieties, packaging, production chains, and commercialization carried out in industrialized countries that built their potato economy on consumption, transformation, and derivatives, which firmly contribute to their GDP in support of a better life quality.
